2 (6 ounce) fillets Pollock fillets
1/4 teaspoon cayenne pepper
1/4 teaspoon black pepper
¼ tsp salt (optional)
1 onion, cut into strips
1 green bell pepper, cut into strips
4 (1/4 inch thick) slices red tomato, cut in half
4 slices Monterey jack cheese


1. Preheat oven to 350 degrees. 

2. Sprinkle each fillet with peppers and salt. Place seasoned fish on a greased baking sheet then, on top of the fillet, layer a slice of onion, green pepper, and tomato. 

3. Bake 15 minutes or until fish has cooked and flakes easily with a fork.  

4. Turn oven off and place two slices of cheese on each fillet. Allow fish to remain in the warm oven for 2 minutes or until cheese melts. 

1pound Pollock fillets, fully thawed
1 egg
3 tablespoons cornstarch
1 cup flour
1 cup cold water
Cooking oil

Ingredients for Sweet Tart Sauce
2 garlic cloves minced
3 tablespoons sugar
2 tablespoons lemon juice
1/2 cup chicken broth
6 tablespoons Asian fish sauce
1/2 teaspoon cayenne


1. Mix all ingredients for sauce in a small bowl. Prepare at least 1hour before serving to bring out the flavors.

3. Dip fish in batter and fry until golden brown

4. Top fish with sauce and serve
If you prefer, try cheddar or swiss cheese on this fish.
Be sure to make sauce ahead of time- the longer it sits, the better the flavor!
